storing carrots
Remove the green tops before storing because they increase the respiration
rate and draw moisture from the carrots, causing shrivelling. Keep carrots
in the refrigerator in plastic bags with air holes to ensure adequate ventilation.
Air circulation prevents condensation build up and premature decay.
Carrots taste best when used within 2 weeks, but the nutritional value will
keep for several weeks. Prevent bitterness in carrots by storing them away
from apples and other fruits that give off volatile gases (ethylene) while
ripening.
Peeled carrots will keep for at least a week in the fridge. You may find
a light frosting may appear on the surface. Just soak them in cold water
for a while and they will return to their brilliant orange colour. |
