introduction
Onions from Wilcox are grown in the key growing regions of Pukekohe
and Waikato and are harvested, stored and pre-packed for year round
availability in New Zealand supermarkets. Varieties are continually
evaluated to ensure consistent quality standards in taste, texture
and keeping properties. Purpose-built onion packhouses are suited
at Pukekohe in the North Island and Rakaia in the South Island.
Significant export orders are achieved primarily to the UK through
their export company Sofresh.
Onions are the most used flavouring vegetable in the world. Brown
or red onions or one of their relatives - garlic, chives, shallots,
spring onions and leeks are used in stews, casseroles, roasts, soups
and salads and most savoury dishes. Onions vary enormously in shape,
size, colour, texture and intensity of flavour.
They are among the oldest of man's cultivated plants. It is believed
they were known and used in India, China and the Middle East before
recorded history. The ancient Egyptians worshipped onions, and during
the Middle Ages they were used as currency. Onions, particularly garlic,
have also been used as medicines.
